Waiting…

The loaded baked potato salad is made, so are the biscuits, the house is clean, the camper is packed and now we’re just sitting here waiting.  Lloyd is waiting for an important call and email and once he’s gotten them, we’re out of here!  I can’t wait to get all set up so we can get to the pool!!!  Lauryn has been excited all day too!  She was my helper, getting the last few things packed.  Now if only these people we’re waiting on would hurry up and get back to Lloyd – don’t they know we’re going camping??? – then we could go! :)

Great Weekend

This has been such a great weekend!  I wish it wasn’t over!  On Friday, my mom and Kathye had bacon cheeseburgers and loaded baked potato salad with us.  On Saturday, we went over to a friends house for a faux luau, complete with some very yummy jungle juice and today, Lloyd and I went to Hubbardston for a family reunion.  It was such a nice weekend!  The weather was nice, the food was nice, the drink was yummy and company was fantastic!  I hope everyone else as nice a weekend as we did!

Busy Thursday

This week has seemed pretty busy but today Lauryn and I did a lot of running.  We left just before 11 am.  We went to the bank, the gas station, then off to GR, picked up some burgers for lunch, went to Lloyd’s office to eat and visit, then went to my old office and visited Aunt Dereka and some of my former coworkers.  We came back to the house and I cleaned out the fridge, then went to mom’s and Shane’s before we came home and I started dinner.  Lauryn is now sleeping peacefully in bed and I finally have a chance to sit down and do my daily blog….and watch my Y&R :)

Mom is coming over tomorrow after work and I think I’m going to make burgers on the grill for dinner.  I might make my loaded baked potato salad to go with it too.  Just depends on how ambitious I feel tomorrow morning :)

Loaded Baked Potato Salad

Today we’re going to my brother’s house for a barbecue and maybe a bonfire if the weather gets a little better. We’re celebrating my mom’s birthday, which was yesterday. It should be a nice little get together.

Yesterday went better than I had anticipated with letting mom and Kathye know we just can’t do those super late nights anymore. They both seemed to understand and didn’t seem to have hard feelings at all. I’m always so afraid of hurting people’s feelings. I let them know that with us trying to get Lauryn on a better schedule, that makes a little more Lloyd and Cari time. We used to have all the time in the world to talk and hang out and we just don’t have that anymore and we both really miss it.

Time to go finish up that loaded baked potato salad and start getting me and Lauryn around.

Here’s the recipe:

3/4 c. sour cream

3/4 c. mayo

8 slices of crisply cooked bacon, drained and chopped

1/2 c. red onion

1/2 tsp. salt

1/4 tsp. black pepper

6 med. baking potatoes (about 2 lbs.)

green onions, thinly sliced, for garnish

shredded cheddar cheese for garnish

1. Combine sour cream and mayo in a small bowl.

2. Chop bacon and red onion and add to sour cream mixture.

3. Stir in salt and pepper, cover and refrigerate.

4. Preheat oven to 425 degrees.

5. Bake potatoes for 50-60 minutes or until tender.

6. Remove potatoes from oven and completely cool.

7. Coarsely chop potatoes into 1/2″ pieces.

8. Place in large bowl and fold in sour cream mixture.

9. Sprinkle sliced green onions and shredded cheddar cheese over top.

10. Cover and refrigerate 4-6 hours or overnight.

*Note* Pretty much everyone in my family loves cheese, so I add some extra cheddar in when I’m mixing the potatoes and the sour cream mixture :)

7. And as for the weekend, tonight I’m looking forward to my mom and Kathye visiting, tomorrow my plans include going to Shane and Trisha’s to celebrate my mom’s 50th birthday and Sunday, I want to have the whole day with just Lloyd and Lauryn!

We’ve been trying to get Lauryn on a better bed time schedule. It hasn’t been super easy but I think we’re getting there. For the first few months, I could not get her to sleep before 1:30 am. I got her on a nightly routine and slowly, that helped her get to bed by 11 pm. This whole week, I’ve started the routine at 9 pm and tried to get her in bed before 10 pm. She usually falls asleep in my arms while she’s finishing her bottle but as soon as I lay her down, her eyes pop open and she’s full of energy again. If you’ve ever read the “What to Expect In the First Year” book, you’ll see a picture of Lauryn under the “active baby” description :) Last night, she put up a little fight but she did fall asleep just before 10 pm. We’re getting there.

Tonight my mom and Kathye are coming over. I have no clue what I’m making for dinner. I think I need to tell them that while I love visiting with them every Friday, I can no longer do until 1 am every time. It’s exhausting! With trying to get Lauryn on a better schedule, I think it will help if we don’t have company so late. I hope they won’t be upset.

I have to get a few things to make my loaded baked potato salad for mom’s birthday dinner at Shane’s tomorrow. It’s pretty yummy! I’ll post the recipe for it later. They were planning on a bonfire after dinner but the forecast is calling for rain and it’s not supposed to be as warm as they had originally predicted so we’ll see.

Off to get a few things done before I have to pick mom up and run errands. Have a GREAT WEEKEND everyone!!!
