Sunny Days :)

This week is going to be so nice!  The weather is supposed to get warmer and sunnier with each day!  Lauryn and I will definitely be spending a lot of time outside and it will be so nice to have all the windows open inside to get that fresh air flowing through the house.

I’m really looking forward to Easter.  Lauryn has the cutest little yellow dress to wear.  We’re going to do a mini Easter egg hunt at home before we go to her grandma and grandpa’s and have the big one with all of her cousins.  I’m thinking of getting her a potty for Easter.  I don’t think she’s ready to be potty trained quite yet but I think getting her used to it and letting her see that it’s all hers is a good start.  Most people give their kids candy for Easter, I’m giving mine a potty :)   I figure, she doesn’t eat candy right now anyway and I’m sure she’ll get plenty of sweets from her Grandma so we’ll give her something useful.  The Easter baskets can happen next year :)

Today we ripped this meme off blogger named Chibi Pon from the blog Please Don’t Stop the Music. She states that she grabbed it from a friend on Nettby XD. But, it was probably stolen there as well. So, of course, that will be as far as we go. Tracing back our theft’s thieves might take some time. It is a long meme, so we will do it in two parts. Today is part one. Strawberry Whipped Sensation

I tried this recipe that was in my latest Kraft Food & Family magazine. You can find their link on my sidebar. Lloyd and I thought it was amazing! I thought it would be a perfect dessert on a hot summer day but Lloyd disagreed…he thought it would be perfect any of the year :)

4 c. fresh strawberries, divided

1 can sweetened condensed milk

1/4 c. lemon juice

1 (8oz.) tub of Cool Whip, thawed, divided

8 Oreo cookies, finely chopped

1 Tbsp. butter, melted

Line a 9×5 inch loaf pan with foil, with ends of foil extending over sides.  Mash 2 cups berries in a large bowl.  Add milk, juice and 2 cups of cool whip;  mix well.  Pour into prepared pan.

Mix chopped cookies and butter.  Spoon over cool whip mixture.  Cover with ends of foil; gently press cookie mixture into cool whip mixture.  Freeze 6 hours or until firm.

Invert dessert onto plate when ready to serve; remove pan and foil.  Frost dessert with remaining cool whip.  Slice remaining strawberries; use to garnish dessert.  Freeze leftovers.

Holy Wind!

I had to go to the store today so I figured while we were out, we could stop at the park. The wind was blowing so much, I thought Lauryn and I were going get blown right away! We were only there for a few minutes because there wasn’t really much for Lauryn to play on. That playground is definitely meant for bigger kids. Oh well. I’m thinking of taking her to the mall again this weekend so she can run around and play there. They have more things her size and she seems to really like it there :)

So far, today is consisting of the usual Thursday tasks. Cleaning out the fridge, getting the garbage all bagged up, cleaning the litter. Aren’t you jealous? :)

Since I’ve been staying home with Lauryn, I’ve been considering taking some classes and looking into online degrees. I know someday when we’re done having kids and when they are in school, I’ll go back to work and if I get a degree, I can do something different. I would have to figure out what it is I really want to do, but I have time :)

Commercials

It’s amazing how many commercials there are about diet pills and weight loss plans and how many celebrities are endorsing them.  I had checked out the http://www.quicktrimextremeburn.com site after I saw the commercial with the Kardashian girls.  If only we could all look like Kim Kardashian!  I have a feeling even if I had decided to try it out, my body wouldn’t even come close to looking like hers does :)

Barbecued Chicken

I made this for the second time last night and it’s just so good I have to share the recipe :)   The first time I made it, it was really good but I thought it tasted a little too tomato-y so last night I added a little more brown sugar, a little more bbq sauce and a few dashes of tabasco.  This is one of those recipes you can easily adjust and play around with to better suit your taste.  The chicken comes out so juicy and tender and it goes great with rice.

3-4 lbs. boneless, skinless chicken breasts

oil

1 onion, chopped

1/4 c. green pepper, chopped

1 c. ketchup

1-2 Tbsp. barbecue sauce

1 Tbsp. mustard

1 Tbsp. Worcestershire sauce

1 Tbsp. lemon juice

2 Tbsp. vinegar

3 Tbsp. brown sugar

1/4 c. water

1/2 tsp. salt

1/8 tsp. pepper

Lightly brown chicken in oil in a skillet.  Place in slow cooker.

Layer onions and green pepper over chicken.

Combine remaining ingredients and pour over chicken.

Cover and cook on low for 6 hours or high 3 1/2 – 4 hours.

My mom and I were talking about fat burner reviews the other day and that is partially what helped me decide to stop thinking so much about finding things to help me get to my weight loss goal.  I’m not a fan of pills of any kind, not even aspirin, and don’t like to take anything unless I absolutely have to.  I think getting more active is the right way to go.

The Sun Is Shining!

I love sunny days!  I am so glad to hear that we should be expected a few of them this week :)

I have decided that while I still want to lose weight and get into better shape, I am not going to stress so much about it.  Now that the weather is finally getting warmer, I plan on walking as much as I can.  I used to walk all over this town when I was a kid and now I just hop in the truck and go.  There are so many parks within walking distance and I think it would be fun to get out and take Lauryn and Cloz’r to them.  So no more trying to find the best weight loss pills that work, I’m going to concentrate on getting out, playing with my daughter and eating healthier.  I think that’s a pretty good plan :)

Pear Bundt Cake

I made this last Friday and everyone thought it was really good.  My brother said it tasted like the outside of a twinkie :)   I forgot to take a picture of it before it was demolished though.

2 (15 oz.) cans of pears in syrup

1 pkg. white cake mix

2 egg whites

1 egg

Brown sugar

Coat bundt pan with nonstick cooking spray and flour.  Drain one can and chop pears.  Spread evenly on bottom of bundt pan and sprinkle with brown sugar.

Drain the other can of pears but reserve syrup in mixing bowl.  Chop pears and add to bowl.  Add dry cake mix, egg whites and egg.  Beat on low speed for 30 seconds then on high for 4 minutes.  Add batter to pan.

Bake at 350 degrees for 50-55 minutes or until a toothpick inserted near center comes out clean.  Cool for 10 minutes  before removing from pan to a wire rack to cool completely.

What A Tease!

So I get up and turn the news on this morning and they report that it’s going to get up to 55 degrees today….with rain :(   That is such a tease!  I’m ready for 70 degrees and sunny!  At the very least the rain will melt the snow and I’m all for that!

Last weekend was really nice.  My mom came over for a visit and dinner on Friday, we stayed in and hung out Saturday and on Sunday we went to Lloyd’s parents house to celebrate his moms birthday.  Lloyd’s grandpa had made a little table for Lloyd and his brother when they were kids and Lauryn had fun sitting at it playing with the dishes :)   We had a great dinner, some yummy homemade pie, visited for a bit and then came home.

Shortly after we got home, Kathye stopped by.  She came in and asked me where my husband was.  I told her he was on the back porch and asked why and she said she came to flash him!  I said, “Okay….”  So she went out there and told him she was here to flash him, lifted her shirt and flashed him the Michigan shirt she had on underneath :)

The women in my life can be crazy sometimes but I love them :)   Lloyd is a Michigan State fan, by the way, which is why she came to flash her Michigan shirt :)

Yesterday, Lauryn and took a walk down to the store to get a few things.  I decided to take the nature trail back home and it was so nice to be out in the fresh air!  We were only gone about an hour but it felt good!  I had hoped that the fresh air would get Lauryn tired so she’d take a good nap – since her molars are coming she hasn’t been sleeping well – but I think it had the opposite effect.  She was super hyper when we got home.  Then around 8:45ish pm, she was in her highchair drinking her milk and she said, “Night night.”  I asked her if she had said, “Night night” and she said, “Bees!” which means please.  That was the first time she’s ever asked to go to bed and she fell asleep without making a peep!  Usually she fights going to bed…I think she’s afraid she’s going to miss something :)   Lets get some more nice weather so we can get out and enjoy it and have more nights like last night!
