Parmesan Baked Chicken

I made this for dinner tonight and it turned out really good!

1/2 c.  Parmesan cheese

1/2 c. seasoned bread crumbs (I used garlic/cheese croutons crushed up)

1/4 tsp. salt

1/4 tsp. pepper

1/4 tsp. paprika

3-4 Tbsp. melted butter

3 lg. chicken breasts cut into strips

Preheat oven to 400 degrees.  Mix parmesan, bread crumbs, & seasonings in a shallow dish.  Dip chicken in butter then coat with bread crumb mixture.  Place on a greased cookie sheet and bake for 35 minutes or until chicken is cooked through.

Not A Great Start To The Week

My poor punkin’!  She has a cold.  She started getting the sniffles last night and by this morning, it was a full blown cold.  Fortunately, she’s in good spirits.  We actually got a little video of her walking today.  She’s taking more and more steps every day.  I’ll try to upload the video tomorrow :)   I hope she sleeps well tonight and feels better in the morning.  I just took a dose of medicine because I’m started to feel a little yucky too!

Today felt weird.  Lloyd was home for four days in a row and when he went back to work today, the house felt really empty!  I missed him!  Even though the days off were pretty busy, it was so nice having him here so much!  Lauryn got so much extra “Dada time” too!

I’ve really been getting into that loom knitting!  I’ve made a few hats and a few scarves now.  I’ve found a bunch more patterns that I want to try.  There are sock patterns and teddy bear and doll ones.  The projects work up so quickly that I’m having a lot of fun with it.  Here is a hat I made recently.  It’s an adult sized hat but I had the cutest little model for it :)

Manic Monday

Reflect on the characteristics of your best friend. What makes him or her so special?  I have two best friends and I think both of them have these characteristics:  Kind, caring, they are great listeners, wonderful mothers, funny, outgoing, confident, intelligent….I could go on and on!

What is one quality you admire most in others?  Patience…I seem to have lost mine over the years.

Describe an activity that you think is truly romantic.  For me, snuggling on the couch with Lloyd, either watching a movie or just talking, is my idea of romance.  I’m a pretty simple girl :)

1. When is your birthday? Nov. 13th

2. Where were you born? Greenville, MI

3. Where do you live now?  Belding, MI

4. What is your heritage?  Mostly Scottish and Irish.

5. Tell us about a weakness.  People Magazine….I’ve been addicted for years :P

6. What’s a goal that you’d like to achieve?  To have baby #2 by the time I’m 30.

7. What is the most overused internet phrase? LOL

8. What was your first thought this morning? COFFEE!!!

9. When do you usually go to bed? When I’m tired…the time varies.

10. Do you smoke? If not, did you ever? Yes, I hate to admit that I do.  Never in the house and never around Lauryn.

11. Do you like your current relationship status? Happily married.

12. Do you (or did you) get along with your parents?  Yes.

13. How often do you drink alcohol? Not very often.  Maybe once a month or once every couple of months.

14. Have you ever tried drugs (that weren’t prescribed)?  Yes, when I was a teenager.

15. Have you ever gone skinny dipping? If yes, do tell.  No.

16. If given the choice, how would you like to die? At a ripe old age and peacefully in my sleep.

17. What did you want to be when you grew up?  A mommy.

18. Have you ever been dumped? Yes.

19. What’s on your pizza?  Extra sauce, cheese, pepperoni and ham.

20. Have you ever shoplifted?  I almost did once when I was a kid but I freaked out and put the item back.

Happy Thanksgiving

There are so many things to be thankful for!  I have an amazing husband who is so kind, thoughtful and loving.  He works so hard for his family then comes home and shows us nothing but love.  He is a wonderful father, a great provider and somehow he’s managed to love me and all of my quirks all these years :)   He is my husband and my best friend.  I love you, Lloyd!

I have a beautiful daughter who amazes me daily.  I love to watch her grow and learn new things.  She is healthy and happy and because of her I finally feel like I have a real purpose in this world.  She has blessed us and made our family whole.  I love you, Lauryn!

I have a family who love and support me, no matter what decisions I make in life.  We have been through some tough times together and that has only made us closer.  I have friends who have always been and always will be there when I need them, whether it’s to share a goofy “Cari” moment with (I have lots of those :) ), when I need advice or when I’m feeling down and just need someone to listen.  I love you all!

1. If you won a brand new house in a Dream House Giveaway would you move into it, sell it to pay the taxes and make a profit, rent it out or give it to a family member/friend who might need it?  I’d move in and rent the house we are in now.

2. Are you good at billards? Not particularly.

3. Does anyone on the planet really want to see Levi Johnston naked in Playgirl (other than when Bristol Palin did)?  No.

4. Is your phone ringing right now? No.

5. Do you think man has eaten or tried to eat every type of animal on the face of the earth at one point or another? If not, what don’t you think man has tried?  Yes, there are some people out there who will eat anything!

6. The new movie Avatar has been showing sneak peeks and been hyped to the max. Will you see it?  Probably not.

7. If a slightly bigger fish eats a small fish, then a bigger fish immediately eats that one, then an even bigger fish immediately eats that fish and then finally a huge fish eats the one that just ate that fish and it gets caught by you… how many meals will you have from that one fish?  None, I don’t care for fish!

8. If you had an appointment with the doctor and all the plants in the office were dead, would you still see the doctor? Yes.  It was probably the receptionists fault they didn’t stay alive.  I say that because at my previous job, I was the full time receptionist and my co-worker was part time…she always took care of the plants.  When she left, the plants didn’t fare so well because I have a black thumb.

So what happens at 50, 60, 70, 80, 90, 100?  You just don’t give a damn anymore because you’re getting older :)

Not Enough Time In The Day

I feel like I can’t keep up with this blog as much as I did when I first started it.  I think part of it has to do with my lil’ girl getting more and more active every day!  The only time I get back to the office is when Lauryn and Lloyd are sleeping and then it’s not too long before I go to bed too.  It’s also partly because of my new obsession.  I’ve taken up loom knitting.  It is so fun and easy!!  I got the looms three days ago and I’ve made three hats and a scarf.  It goes by so quickly and I’m using up a lot of scrap yarn that’s been accumulating over the years!

I can’t believe how fast Lauryn is developing.  She stands on her own for the longest time now and she’ll take about 10 steps on her own between me and Lloyd.  Won’t be long now!  Her sixth tooth has broken through, thankfully, she had been waking up a lot from this one.  She’s slowly getting interested in our food.  I try just about everything and she’s become very picky about what she eats these days and that frustrates me so much.  I just want to make sure she’s getting the nutrients she needs.  We’re getting there though.  Thanks to the girls at the MMC who made me feel better about it and let me know that some of their kids did the same thing.  Lauryn is also trying to say more words.  Her “thank you” went from “takoo” to “thak-en”, she’s still saying dog (sounds German like dach :) ), and she’s working on up, down, baby, no and nose.  Our favorite is kitty kitty.  Whenever we say it to her or she sees the cat, she clears her throat.  Lord knows where she came up with that but apparently that means kitty kitty to her LOL.  Silly girl.

I’ve decided to go on my own little weight loss journey.  When I look in the mirror, I see that I have some areas to work on but when I’ve seen pictures of myself that were recently taken, it’s almost a shock!  I am not at all happy with how I look and I need to take control of it and get happier with me.  We brought the eliptical machine up from the basement and it’s here in the office now.  I was on it for 15 minutes today (first time since just after Lauryn was born) and that kicked my butt.  I found America’s Next Top Model on the computer to watch while I do it…I figure what’s a better motivator than a bunch of skinny model wannabe’s? :)   I also want to keep my portions of food in check.  I don’t eat too much unhealthy food, but I do think the quantity is a problem.  I might make a category on here just for it….we’ll see.

I also want to apologize for not being on top of my comments lately.  I am sorry.  As I mentioned I’ve been busy with Lauryn and looming and I’ve become a lame blogger!  I’m going to stay on top of that from now on!

Lloyd talks business in his sleep.  His words are as clear as day and he usually says figures and phone numbers.

The leaves changing colors.

A little bit.
4. Who was the last person to do something extra special for you?
Lloyd and Lauryn.
5. Would you ever take someone back if they cheated on you?
That’s a tough one…maybe…
6. Are you happy with where you are in life?
Very much :)
7. Do you believe that you can change someone?
No, I think people can change but they have to want to.
8. Have you ever wished you could’ve had someone but you couldn’t?
Maybe years ago when I was dating but now I have someone who is more than I could have ever hoped for :)

Saturday 9: Man on the Moon

1. Do you think it was important to send a man to the moon?
Yes.  I don’t really have a good reason why, I just do.
2. What is your biggest fear?
Spiders!  I can’t even begin to explain how irrational my fear of them is.
3. If someone hung a sign around your neck today, what would it say and why?
Do Not Mess With The Over Tired Mama!
4. What is the longest line that you’ve stood in and was it worth it?
The one year my mom and I went shopping on Black Friday…it was so not worth it!
5. As the holidays approach, what song are looking forward to hearing again?
Regular music on my stations…I don’t mind Christmas music but not for months at a time.
6. Whose music do you think is the most important of your generation’s?
I don’t know.  My generations music is all over the place!
7. Do you find it is to be kind to strangers? Give an example.
It is what? Easy?  If that’s what you meant, then I have to say sometimes.  When it’s for a good cause I have no problems giving.  When I lived in GR and would work a crazy long and busy shift waitressing and then some homeless guy would ask me for some of the money I’d just busted my butt for – then it wasn’t easy for me to give at all!
8. When do usually lose your patience?
I used to be the most patient person in the world….now, not so much.  When someone makes a stupid/dangerous move on the road and I have my daughter in the car, I lose all patience!
9. Is there a book that you’re dying to see as a movie? No.
